San Francisco bartender Jerry Thomas wrote the country’s first book of cocktail recipes in 1862. In the preface he said, “A new beverage is the pride of the bartender, and its appreciation and adoption his crowning glory.” 

Experts say today’s increased interest in spirits, cocktail flavors and craft distilleries resembles the period between 1850 and Prohibition – the only other time in history that drinkers and bartenders thrived. It was in 1838 that the first cocktail, the Sazerac, was invented in New Orleans and classics like the Manhattan, Old Fashioned and Jack Rose followed. 

Today, the cocktail movement includes terminology like craft cocktails, craft mixology and molecular mixologists. Craft cocktails are handmade and often described as complex, unique and delicious. Molecular mixologists transform the molecules of a drink and convert them to another form. Craft mixology combines separate ingredients and plays them off each other to create a tasty surprise.
